Position Summary:

The Executive Steward is responsible for all aspects of leading and directing the sanitation team members to deliver AAA Four Diamond level service. The incumbent must have a deep understanding of sanitation policies and procedures and be able to train the team to established cleanliness standards. Responsibilities include overseeing the performance and coordination of all work performed by the Team Members. This role requires effective leadership skills, creativity, attention to detail, and a passion for delivering an exceptional experience to internal and external guests.

In this Role:

  • Set clear expectations and provide ongoing training to ensure Team Members deliver exceptional experiences. 
  • Teach and train safe sanitation standards and ensure consistency in delivery. 
  • Foster a positive work environment that encourages teamwork and professional growth. 
  • Directly supervise sanitation team members throughout the Food & Beverage department. 
  • Responsible for hiring, training, scheduling, counseling, and evaluation of department Team Members. 
  • Attend daily Team Member Huddles and look at the communication boards for pertinent information. 
  • Ensure proper training of all equipment, chemicals & tools used in completing work for all Team Members. 
  • Ensures familiarity with MSDS information and provides training and compliance with all Team Members accordingly.
  • Handle any Team Member or Guest opportunities.
  • Assists in the development of annual plans to drive continuous improvements in Team Member Engagement and Guest Satisfaction while achieving annual targeted retention levels for the department. 
  • Oversee all aspects of daily operations, including providing directions and guidance, and ensuring proper staff scheduling to provide coverage to meet all guest traffic volume needs, including all phone calls on the property. 
  • Ensures that all areas of F&B are regularly cleaned and inspected according to compliance requirements. 
  • Implement and enforce health and safety standards to maintain a clean and safe environment for guests and staff. 
  • Monitor the team’s work quality and the overall cleanliness of the kitchens and dish areas to ensure consistency and guest satisfaction.
  • Set performance standards and provide ongoing coaching and feedback to ensure high levels of employee engagement and productivity.
  • Ensure adherence to AAA Four Diamond standards and maintain excellence in service delivery. 
  • Ensures that all deep cleaning such as floors, kitchen equipment, walls, F&B loading dock, and trash rooms are cleaned daily. 
  • Inspects kitchens, workrooms, and equipment for cleanliness and order. 
  • Maintains and trains Team Members on correct chemical usage. 
  • Ensures service ware is washed as it is brought back from all dining areas. 
  • Ensures all food preparation area tables, shelves, and wall surfaces are cleaned. 
  • Ensures that all floor areas, including walk-ins and storerooms, are swept, and mopped. 
  • Ensures that all hood cleaning and maintenance are conducted according to maintenance schedules.
  • Establish and ensure compliance with departmental policies, practices, and procedures in accordance with Gun Lake Casino Resort’s Core Values (The 7 Grandfather Teachings), while maintaining AAA 4-Diamond service standards
  • Ensures that all health department regulations are adhered to by all Team Members reporting to this position and all kitchen areas meet established local, federal, and company-established standards and codes. 
  • Ensure compliance with Serve-Safe food safety and sanitation regulations, maintaining a clean and organized kitchen environment.
  • Ensure compliance with all relevant regulations, industry standards, and company policies, including health and safety protocols, licensing requirements, and quality standards.
  • Assist in risk mitigation strategies to minimize operational risks and ensure the safety and security of guests and Team Members.
  • Responsible for practicing, supporting, and promoting Gun Lake Casino Resort’s “Unsurpassed Service” and AAA Four Diamond service standards at all times. 
  • Foster a culture of exceptional customer service, ensuring that internal guests receive personalized attention and memorable experiences.
  • Monitor feedback and implement improvements to enhance satisfaction. 
  • Resolve guest concerns and ensure timely and effective resolution of issues.
  • Ensure the proper setup and operations of a commercial pot washing area and commercial dish machines. 
  • Maintain a deep cleaning schedule of all cooking equipment and ventilation hoods. 
  • Work with the Facilities Department to monitor and document any culinary or sanitation equipment if an area is below standards or not working properly.
  • Assists in coordinating and directing the set-up and teardown of equipment for banquet functions and meetings, including tables, chairs, pip & drape, dance floors, and all other duties as assigned. 
  • Responsible for the storage and retrieval of all banquet china/glass/silver, tables, chairs, banquet service items, and equipment as needed. 
  • Monitor expenses, implement strategies to maximize profitability and identify areas for cost optimization while maintaining the highest quality standards.
  • Assist in conducting regular financial analysis and reporting to senior management, providing insights and recommendations for business improvement.
  • All other duties as assigned.

Essential Qualifications:

  • Must be 21 or older. 
  • High school diploma or GED required. 
  • At least five (5) years of kitchen sanitation management experience required.
  • At least three (3) years in a culinary leadership role having P&L responsibilities is preferred. 
  • At least three (3) years in a AAA Four Diamond casino or resort environment with a focus on guest service and hospitality management preferred. 
  • Must possess the ability to work hands-on in any kitchen dish tank to ensure all items are cleaned and maintained according to department standards. 
  • Ability to speak, write, and communicate in English required. 
  • Comprehensive administrative knowledge, which includes profit and loss statements, cost control, menu planning, budgeting, training, inventory control, and sanitation required. 
  • Demonstrated ability to communicate effectively with Guests, Team Members, and Management in both written and verbal form.
  • Demonstrated ability to control operational costs and improve financial results. 
  • Demonstrates a high proficiency in written business communications to effectively present data and analyses for operational improvements. 
  • Must demonstrate sound judgment and maturity in his or her decision-making ability, even when dealing with difficult situations.
  • Must possess and demonstrate strong leadership skills and ability that will enhance and exemplify Gun Lake Casino Resort’s “Unsurpassed” Service Standards. 
  • Must hold/maintain certification with handling (ServSafe) and Alcohol Awareness (TIPS) and the ability to gain/maintain training requirements from both programs.
  • Availability and willingness to work extended hours including nights, weekends, and holidays as business requires.  
  • Must be able to obtain a gaming license through the Gun Lake Tribal Gaming Commission.
  • Must possess sufficient computer skills in Microsoft Office systems. Must be able to procure supplies through a procurement system. 
  • Demonstrated ability to work independently with minimal direction.
  • Conduct group and individual training regarding policies and procedures on an ongoing basis. Set daily, weekly, and monthly goals and opportunities and lead the unit to achieve the desired result.
  • Communicate consistently with all managers, keeping them abreast of all department activities.
  • Ensure that all Team Members adhere to all policies and procedures set forth by the department.
  • Responsible for maintaining cleanliness and sanitation standards in accordance with department policies and the Department of Health.
  • Ensure that the restaurant and equipment are in good working order to ensure a clean and hazard-free work area that complies with the Department of Health, OSHA, and Gun Lake Casino Resort’s guidelines. Monitor, work with facilities, and document if any area is below standards or not functioning properly.

Physical Requirements:

  • Requires normal, corrective vision range, the ability to see color, and the ability to distinguish letters, numbers, and symbols.
  • Ability to read, write, and input data into the computer.
  • Ability to climb, bend, reach, walk, and stand for the duration of the shift.
  • Manual dexterity to operate job-related equipment.
  • Must be capable of lifting 50 lbs with or without assistance.
  • Requires normal sense of smell, taste, touch, and hearing.
  • Ability to sit and work on a computer for long periods of time.

Work Conditions:

Work is typically in an area which may be unusually hot, cold, and/or noisy and may contain second-hand smoke. Work may be performed in a small area with a 3 ft. wide access. Tasks performed from a sitting or non-sitting position. Performance of job duties will require standing, walking, lifting, reaching, pushing, pulling, and grasping. These tasks include the maintenance and care of assigned areas.  Work may entail trained chemical usage. Constant contact with fellow Team Members and guests.
