Position Summary
The primary responsibility is for efficient and proper operations of various food outlets including, but not limited Deli, Bingo, Fun Connection, Palace West, Employee Dining Room and Stewarding Operations. Exhibit knowledge of product lines, prices and full awareness of safety, Sanitary laws and regulations. Provides efficient and smooth customer service according to the standards required by the Isleta Resort and Casino. While promoting and exhibiting World Class Guest Service to all the Isleta Resort and Casino employees and guests.
Isleta Resort and Casino Guest Service Agreement
All Team Members will display 100% commitment to World Class Guest Service through the delivery and maintenance of Guest Service Standards established by the Isleta Resort and Casino.
Essential Functions and Responsibilities: Essential and other responsibilities and duties may include by are not limited to the following:
- Attends regular meetings organized by management.
- In conjunction with Food and Beverage Director, plans, organizes, and supervises all food and drink sales.
- Abides by all state, federal and liquor regulations pertaining to serving alcoholic beverages; minors intoxicated guests, etc.
- Ensures adequate product availability for forthcoming session.
- Ensures products are attractively displayed and meet Isleta Resort and Casino standards of presentation and quality.
- Ensures safety and sanitary laws are strictly adhered to, hygiene requirements are implemented and maintained, and any health-related problems are reported immediately to the Food and Beverage Director.
- Maintains current awareness of food and beverage trends and technology to support efficiency of service, production and product.
- Manages scheduling to ensure each shift is adequately covered for the projected business volumes.
- Coordinates and conducts training amongst all service staffs within the Isleta Resort and Casino to assure consistency and the highest levels of quality.
- Monitors, observes, and interacts with guests to assure no guest is over served alcoholic beverages.
- Ensures staff is prepared for daily operations and inspects restaurant and bar setups for compliance to standards.
- Ensures employees observe proper cleanliness and sanitation standards.
- When required, assists with pre-opening bar, preparation and layout.
- Ensures an open and welcoming atmosphere that promotes skill enhancement.
- Greets guests, maintains a friendly and inviting atmosphere, and promotes positive guest relations through prompt, courteous, and efficient service.
- Promotes positive guest relations through prompt, courteous, and efficient service.
- Gives basic instruction on all promotions and special events.
- Occasionally performs duties of subordinates and other duties as need.
- Ensures the highest standards of personal appearance are maintained and all subordinates wear the Isleta Resort and Casino uniforms.
- In conjunction with management, continuously trains all service staff.
- Trains new employees on Isleta Resort and Casino SOP’s and internal F&B policies and procedures
- Establishes persons responsible for closing and side duties, follows-up to ensure all these duties are completed.
- Acts as an intermediary when customers complain
- Conveys employee complaints and suggestions with merit to Management.
- Ensures subordinates are working productively at all times.
- Accounts for and supervises the administering of guest checks.
- Must report any work-related injuries to his/her Manager/Director.
- Must be able to read and understand MSDS (Material Safety Data Sheets) as required by OSHA.
- Briefs the Food and Beverage Director or Assistant Director on matters requiring his/her immediate attention.
When responsible for Stewarding areas:
- Oversees and assists with physical deep cleaning of all stationary and non-stationary equipment including floors and drains in the appropriate production areas as directed by the Chief Steward.
- Manages the physical handling of all cleaning chemicals with Safety as a priority
- Will perform inventory duties as needed, when assigned.
- Maintains standards of chemical storage areas.
- Assigns and oversees that equipment and floor cleaning schedules are maintained.
- Must report any equipment in need of repair to the Chief Steward and the Maintenance Department.
- Ensures safety and sanitation laws pertaining to deep cleaning of all equipment are strictly adhered to, personal hygiene requirements are implemented and maintained.
- Assumes responsibility as assigned to cover shifts and responsibilities in the absence of the Chief Steward.
Accountability and Supervision:
- Responsibilities include interviewing and hiring, planning, training, assigning and directing work; addressing complaints and resolving problems; providing feedback to management as to operating policies and procedures, and suggestions on how to make the Food & Beverage Department run more efficiently and cost-effectively.
- Supervises food outlet operation and staff for short order, fast foods, deli, and employee dining type services; Responsible for the overall direction, coordination, and evaluation of the assigned department
Education and Experience
- High School Diploma or General Education Degree (GED) equivalent required. Or an equivalent related experience.
- Two (2) years F & B leadership/supervisory experience in a high production facility with an emphasis on F & B. required.
All Food & Beverage Managers/Assistant Managers/Supervisors must have Two years (2) of at least one of the following:
- Beverage/Bartender experience.
- Culinary, Food Preparation and Ordering experience.
- Front of House Operations, scheduling experience.
Special Requirements, Licenses, and Certification
- Must be able to acquire and maintain Gaming License issued through POIGRA.
- Must be able to successfully pass a pre-employment drug test and background investigation.
- Must be flexible with work schedule. Must be willing to work any days/hours as needed or required to meet business needs.
- Must maintain all Isleta Resort and Casino-wide educational and certification requirements.
- Must have a New Mexico State Alcoholic Beverage Service Certification, required.
- Must acquire POIGRA Alcohol Server License, required.
- Must possess and maintain Servsafe® Certification, and IHS Food Handlers Certification, required.
Knowledge, Skills, and Abilities
- Ability to listen and understand customer.

- Must have essential experience operating POS (Point of Sale) systems.
- Strong passion and knowledge for F & B operations and quest services.
- Must possess working knowledge of and be able to adhere to all OSHA and HACCP standards and regulations.

- Ability to anticipate customer needs.
- Ability to maintain excellent guest service.
- Working knowledge of Microsoft Office Word and Excel.
- Ability to communicate effectively with customers.
- Ability to read menu and daily special list.
- Ability to calculate bill total quickly and accurately.
- Ability to recall and describe menu and special selection features to customers.
- POS and Cash Handling Skills
Physical Demands and Work Environment
- While performing the duties of this job, the employee is required to sit, stand, and walk for extended periods of time; must be able to stoop, bend, crouch, twist and turn, as well as maneuver through all areas of the casino. Lift and/or move up to 40 pounds.
- Work is generally performed a casino environment working around gaming machines and equipment, exposure to flashing lights and frequent loud noises, large crowds and secondhand smoke.
- Occasionally may have to deal with angry or hostile individual
