The Promotions and Special Events Manager creates, plans, coordinates and executes promotions and special events. Encourages customer participation and brings excitement, activity and celebration to the casino floor, while driving revenue and providing exceptional guest experience.
Specialty Asian (Chinese, Korean, Vietnamese, Thai) Prep Cook, is responsible for providing a supportive role to Asian-cuisine kitchen staff in the preparation of meals and ingredients. Their duties include various food preparation, cooking and cleaning tasks to ensure the kitchen remains efficient in creating and delivering dishes for patrons.
Under the direction of the Senior Executive Chef/Specialty Sous Chef and/or Junior Specialty Chef the Specialty Cook supports culinary management and hourly staff in daily overall kitchen operations for the Specialty Room. Adhering to the Health Department regulations and Pala’s standards and expectations of food service and quality, freshness and presentation. The position will ensure the highest quality food and service. Responsibilities include planning, prep, set up and prepare quality products in all areas of the Specialty Room to include, but not limited to appetizers, salads, sous vide, hot/cold smoking, entrees, soups, garnishes, sauces, dry aging, fermentation, dehydrating, baking, seasonal specials in accordance with departmental quality standards and specifications.
Under the direction of the Asian Specialty Sous Chef, while working closely with the Chef De Cuisine and/or Executive Asian Chef, the Specialty Sous Chef supports culinary management staff and hourly staff in daily overall kitchen operations for their assigned venue. Adhering to the Health Department regulations and Pala Casino Spa Resort standards and expectations of food service and quality, freshness and presentation, the Specialty Sous Chef assists culinary management with overseeing the culinary operations, to include menu concepts and recipe standardization. The Specialty Sous Chef operates in representation of the culinary team’s best in class culture, while championing the goals and priorities of the Tribe in a manner that reflects and upholds the Tribal Community’s vision, mission and values.
