Position Summary

The Restaurant Manager for the Sports Bar & Grille, a high-energy, high volume venue will lead a dynamic team dedicated to delivering exceptional guest experiences. This position oversees operations that include a full-service sports bar, dining area, and adjacent Sports Book, ensuring seamless integration and exceptional service across both spaces. Additionally, the manager will work closely with the Sports Book team to create an engaging, entertainment-driven environment. The role requires strategic thinking, hands on leadership, and a customer-focused approach to managing all aspects of daily operations, staffing, financial performance, and guest satisfaction.

 Essential Duties And Responsibilities

Operations Management

  1. Oversee day-to-day operations of the restaurant and bar, ensuring a smooth guest experience during high-traffic events, sports games, and other peak times.
  2. Ensure timely opening and closing procedures, adherence to all health, safety, and sanitation guidelines, and efficient operation of all front-of-house (FOH) activities.
  3. Coordinate with casino operation, creating an exciting and customer-focused environment.

Customer Experience And Service

  1. Foster an enthusiastic, sports-centric atmosphere that appeals to a diverse clientele, from avid sports fans to VIP casino guests.
  2. Lead the team in delivering high-quality, consistent service, ensuring all guest interactions are warm, efficient, and memorable.
  3. Actively engage with guests, addressing feedback and resolving complaints to enhance guest satisfaction and loyalty.

Staff Management And Development

  1. Recruit, train, and develop a skilled team of servers, bartenders, hosts, bussers, barbacks, and supervisors, with focus on service of excellence and creating a cohesive, motivated team.
  2. Schedule staff according to business needs, ensuring optimal coverage for key sporting events, special promotions, and high-traffic times.
  3. Conduct regular performance evaluations, providing constructive feedback, recognizing achievements, and addressing performance gaps.

Financial Performance And Reporting

  1. Manage the venue’s P&L, with a focus on driving revenue growth, controlling costs, and meeting financial targets.
  2. Implement effective sales strategies, promotions, and up-selling techniques to increase average spend per guest.
  3. Track inventory, manage supply orders, and minimize waste while ensuring the bar are stocked with essential products, ingredients, and supplies.
  4. Prepare and analyze financial reports, identifying trends and adjusting operational strategies to maintain or exceed budgeted goals.

Marketing And  Event Coordination

  1. Collaborate with the marketing team to develop and execute promotions, game-day events, watch parties, and special events that attract diverse audiences and increase foot traffic.
  2. Coordinate with the Sports Book for promotions and events that drive engagement and create a unified experience between the restaurant and the gaming space.
  3. Manage and execute sports-themed events, working with external partners, sponsors, or media to maximize visibility and revenue potential.

Compliance And Risk Management

  1. Ensure strict adherence to all company policies, state regulations, health and safety standards, and liquor license/ordinance regulations.
  2. Implement and uphold all safety, cleanliness, and compliance standards, performing routine inspections to maintain a safe and inviting environment.
  3. Collaborate with security and other casino departments to ensure the safety of guests and employees.

 Key Performance Indicators

This position has Key Performance Indicators (KPI’s) identified as a measurement of success.  KPI’s will be shared with all team members who work in this job title and feedback will be provided regarding the successful completion of the KPI’s as part of the performance review process.

Knowledge, Skills, And Abilities

  1. Knowledge of food and beverage service standards and operational best practices to high-energy, high-volume sports bars.
  2. Familiarity with the dynamics of sports-related events, sports betting, and gaming floor operations, including customer behaviors and event-driven traffic.
  3. Understanding of local, state, and tribal regulations applicable to food service, and gaming, including alcohol service,  health codes, and safety standards.
  4. Awareness of sports bar and restaurant marketing strategies, event planning and VIP’s loyalty program to drive traffic and boost revenue.
  5. Excellent verbal and written communication skills to effectively engage with guests, collaborate with casino and sports book departments, and ensure seamless internal team communication.
  6. Effective problem-solving skills with the capacity to make quick, informed decisions, especially during high-stress, high-traffic times.
  7. Highly organized with the ability to multitask and prioritize tasks, from staff scheduling to event planning, ensuring efficient operations and a positive guest experience.
  8. Ability to remain flexible and adapt to changing circumstances, such as unexpected guest volume surges, event changes, or staffing needs.
  9. Keen attention to detail to ensure that every aspect of the guest experience, from food quality to service speed, meets high standards.
  10. Ability to plan, organize, and execute events, including major sports gathering and promotions, ensuring all elements are synchronized to create a successful guest experience.
  11. Strong Interpersonal/Leadership Skills, professional caring approach towards employees.
  12. Knowledge of financial and administrative

   Education And Experience  

Required

  1. High School Diploma, GED certification or equivalent.
  2. Three (3) years food and beverage management experience with at least 1 year in high-volume sports bar, entertainment venue, or casino setting is highly desirable.
  3. Three (3) years food and beverage supervisory experience.
  4. Must be at least 21 years of age.

Preferred

A degree in Hotel, Restaurant or related field of Management.

License/Certifications/Registrations

  1. Must obtain and maintain a New Mexico Alcohol Server’s License upon hire.
  2. Must successfully complete the New Mexico Food Handlers course upon hire.
  3. Must be able to successfully pass a stringent background investigation.
  4. Will require a pre-employment and random drug screening.
